Where to find ingredients
You can source lamb offal, such as the stomach and intestines, by placing a special order with your local independent butcher, as these items are typically not available in standard supermarket meat aisles. For the Brazilian ingredients, check specialist international food shops or online Latin American grocery suppliers. Bicarbonate of soda and other pantry staples are readily available in the baking aisle of any major UK supermarket.
Preparation method
- In a glass, squeeze one lemon cut into quarters and add the sugar. Muddle well using a muddler.
- Add the measure of cachaça and the ice cubes to the glass. Shake well.
- Set this mixture aside to accompany the cooking process.
- Begin cleaning the lamb stomach thoroughly using water, salt, and the juice of the remaining lemons to ensure all impurities are removed.
- Cook the stomach in a pressure cooker with water, salt, and bay leaves until it reaches a tender consistency.
- While the stomach cooks, chop the intestines into small, uniform pieces.
- Boil the chopped intestines in a separate pot with water and salt until tender.
- In a different pan, heat the vegetable oil and sauté the onions and garlic until translucent.
- Stir in the annatto powder, chopped tomatoes, diced bell pepper, and the cleaned offal. Season with black pepper.
- Simmer the mixture until a thick, flavourful sauce forms.
- Remove the boiled stomach from the pressure cooker and cut it into small pieces.
- Combine the cooked stomach pieces and boiled intestines into the pan with the sauce. Fold in the fresh herbs and grated nutmeg.
- Once the filling is prepared, use it to carefully stuff the cleaned, boiled stomach pouch.
- Cook the stuffed stomach over low heat, allowing all the seasonings to meld together perfectly.
- Serve the Buchada hot, paired with the reserved cocktail and, if preferred, a chilled beer.
Observations
Buchada de carneiro is a hallmark of Northeastern Brazilian gastronomy, celebrated for its bold profile and meticulous preparation. This dish involves carefully cleaning and cooking the sheep's stomach lining (bucho), intestines, and various offal, which are then finely chopped, seasoned, and used to stuff the stomach pouch.
