Ingredients
6 eggs
2 cups sugar
1 can (350 ml) cola fizzy drink
2 cups wheat flour
1 tablespoon baking powder
2 cups sugar
1 can (350 ml) cola fizzy drink
2 cups wheat flour
1 tablespoon baking powder
Where to find ingredients
In the UK, eggs, sugar, cola fizzy drink, wheat flour and baking powder are available in supermarkets and local food shops. Use a standard cola for the closest flavour and texture.
Preparation method
- Open the can of fizzy drink and leave it to stand for a few minutes so the gas can dissipate
- In a bowl, beat the egg yolks with the sugar until pale and fluffy
- Add the cola fizzy drink to the yolk and sugar mixture
- Mix well until all the ingredients are fully combined and dissolved
- Gently fold the sifted wheat flour and whisked egg whites into the batter
- Lastly, add the baking powder and mix gently so you do not knock the air out of the egg whites
- Pour the batter into a greased and floured cake tin
- Bake in a preheated medium oven at 180°C for about 40 minutes, or until a skewer inserted in the centre comes out clean
Observations
This cola cake is a classic and surprisingly easy recipe, perfect when you want a homemade bake with a twist. The fizzy drink adds a subtle flavour to the sponge and helps give it an impressively light texture. It works well for afternoon tea or when you want to serve a simple cake with an unexpected result.
