Ingredients
1 kg of abóbora de pescoço (butternut squash)
2 garlic cloves
2 tablespoons of olive oil
1 teaspoon of salt
2 garlic cloves
2 tablespoons of olive oil
1 teaspoon of salt
Where to find ingredients
You can find fresh abóbora de pescoço and pantry staples at local markets and grocery stores; if unavailable, a butternut squash is an excellent substitute.
Preparation method
- Peel the pumpkin and cut the flesh into roughly 2 cm cubes
- Finely mince the garlic cloves
- Place a large pot or skillet over medium heat with the olive oil
- Add the garlic and sauté for just 1 minute to infuse the oil, being careful not to let it burn
- Add the pumpkin cubes and salt to the pan
- Stir the ingredients occasionally for 10 minutes, until the pumpkin starts to soften
- Cover the pan with a lid and reduce the heat to the lowest setting
- Cook for 5 minutes to allow the pumpkin to finish softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your desired consistency
- Turn off the heat and serve immediately
Observations
