Preparation method
- Scrub the zucchini skin thoroughly under running water using a vegetable brush.
- Pat dry with a clean kitchen towel.
- Trim and discard both ends.
- Slice the zucchini crosswise to separate the thicker end from the thinner one.
- Cut the thicker piece in half lengthwise, then slice each half into three strips to create sticks.
- Divide the thinner piece in half crosswise so all pieces are of a similar size.
- Slice each of these segments into four pieces.
- Heat a non-stick skillet over medium heat.
- Add a drizzle of olive oil and arrange the zucchini pieces with the cut side facing down.
- Grill for about 2 minutes until nicely golden.
- Lightly crush the coriander seeds in a mortar and pestle to release their aroma.
- Turn the sticks over using tongs to brown the other side.

- Sauté for 1 more minute until the zucchini is tender and seasoned.
