Ingredients
2 cups rice
4 cups water
2 chicken stock cubes
3 peeled tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated cheese
100g chopped ham
100g chopped mozzarella
4 cups water
2 chicken stock cubes
3 peeled tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated cheese
100g chopped ham
100g chopped mozzarella
Where to find ingredients
Find fresh tomatoes, ham, and mozzarella in the produce and deli sections of local supermarkets like Shop N Save or New World. If you cannot find pre-peeled tomatoes, fresh vine-ripened tomatoes can be blanched and peeled at home.
Preparation method
- Dissolve one of the chicken stock cubes in a small amount of hot water.
- Place the peeled tomatoes, tomato paste, and the dissolved stock cube into a blender.
- Pulse until you have a smooth, homogeneous sauce.
- Cook the rice in a pot with the 4 cups of water and the remaining chicken stock cube for 15 minutes.
- Lightly whisk the eggs in a mixing bowl.
- Stir the grated cheese, chopped ham, and chopped mozzarella into the bowl with the eggs.
- Fold this mixture into the hot, freshly cooked rice.
- Spread a portion of the tomato sauce across the bottom of a baking dish.
- Spread the rice mixture evenly over the base of sauce.
- Pour the remaining sauce over the surface of the rice.
- Bake in a preheated oven at 180°C for 10 to 15 minutes until nicely gratinated.
Observations
This dish is the perfect way to turn leftover rice into a special, standalone meal. It results in a creamy, golden-brown gratin that is ideal for family lunches or relaxed dinners.
