Ingredients
1 tbsp vegetable oil
1/2 onion, finely diced
1 bay leaf
1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
1/2 onion, finely diced
1 bay leaf
1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
Where to find ingredients
All these staples are readily available in local Fiji supermarkets like RB Patel, Shop N Save, or NewWorld. Look for 'long-grain' white rice in the grain aisle. For the best result, use standard vegetable or sunflower oil found in the baking/cooking oil section. Onions and fresh bay leaves are easily sourced from the fresh produce section or your local village market.
Preparation method
- Finely dice the onion into small pieces
- Bring the water to a rolling boil in a kettle or pot
- Heat a medium-sized saucepan over low heat
- Add the oil and the diced onion to the pot
- Sprinkle in a pinch of salt
- Sauté the onion for 2 minutes until it softens and turns translucent
- Toss the bay leaf into the pot
- Add the rice and stir for 1 minute so every grain is lightly coated in oil
- Carefully pour the boiling water over the rice
- Add the remaining salt and give it a gentle stir
- Increase the heat to medium
- Stop stirring the rice from this point on to ensure the grains stay intact
- Wait until the water level drops to the surface of the rice
- Turn the heat down to low and cover the pot partially with a lid
- Simmer until you notice all the water has been absorbed
- Check for doneness by inserting a fork to push the grains aside at the bottom
- If there is still moisture, cook for a few more moments
- Remove from the heat and keep the pot covered for 5 minutes to let the steam finish the cooking
- Fluff the rice gently with a fork before serving
Observations
This simple technique produces a classic, light, and tender side dish, serving as the essential foundation to elevate any of your daily family meals.
