3 cups water

Where to find ingredients
Rice, onions, and carrots are basic pantry items readily available at any local supermarket, neighbourhood store, or fresh produce market in Fiji. Olive oil can be found in the baking or cooking oils section of major grocers. Bay leaves are usually located in the dried herbs and spices aisle. If you have trouble finding fresh ingredients for specific Brazilian meals, check the international or specialty food aisles for imported dry goods.
Preparation method
- Wash and peel the carrot
- Grate the carrot using the fine side of your grater
- Finely dice the onion
- Bring a little more than 3 cups of water to a boil in a kettle
- Heat a medium saucepan over low heat
- Add the olive oil to the pan
- Sauté the diced onion and grated carrot
- Season with salt
- Cook the vegetables for about 2 minutes until they soften
- Stir in the rice and add the bay leaf
- Mix well so every grain of rice is nicely coated in the oil
- Measure out exactly 3 cups of the boiling water and pour it into the pan
- Give it one last stir and turn the heat up to medium
- Avoid stirring the rice once it starts cooking
- Wait for the water to reduce until it reaches the level of the rice grains
- Turn the heat down to the lowest setting
- Cover the pan with the lid slightly ajar
- Cook until all the water has been absorbed
- Check if it's done by poking a fork down to the bottom of the pan
- Turn off the heat
- Keep the pan covered for 5 minutes so the steam finishes the cooking process
- Fluff the rice gently with a fork
- Mix the carrots through the rice delicately
- Transfer to a bowl and serve right away
Observations
This simple dish is a fantastic way to brighten up your standard rice and pack in a little extra color. The secret to getting that perfect, fluffy texture is to lightly toast the grains in the pan before adding the boiling water.
