Homemade Brazilian Rice Gnocchi (nhoque de arroz)

Ingredients

1/2 cup raw rice
1 egg
1 tablespoon chopped parsley
1 tablespoon chopped coriander
1/2 tablespoon chopped spring onions
1 1/2 cups all-purpose flour
Salt to taste
Water as needed for cooking the rice
8 tablespoons vegetable oil (for the dough and boiling water)

Where to find ingredients

Rice, eggs, and all-purpose flour are pantry staples found at any local Fiji supermarket. For fresh herbs, visit local municipal markets or roadside stalls where you can pick up fresh bunches of parsley, coriander, and spring onions. If you cannot find fresh coriander, it is sometimes referred to as 'dhania' in local markets. Vegetable oil can be purchased in any grocery aisle.

Preparation method

  1. Boil the rice in salted water until it becomes very soft
  2. Drain any excess water thoroughly
  3. Place the cooked rice in a blender along with the egg, parsley, coriander, and chopped spring onions, blending until you have a smooth mixture
  4. Transfer the mixture to a saucepan
  5. Gradually stir in the flour until well combined
  6. Cook over low heat, stirring constantly, until the dough pulls away from the bottom of the pan and forms a cohesive ball
  7. Season with salt to your liking
  8. Take the dough off the heat and let it cool down slightly
  9. On a clean, lightly floured surface, roll the dough into a log about 2 cm in diameter
  10. Cut the log into 2 cm long pieces to form the gnocchi
  11. In a large pot, bring plenty of water to a boil with a pinch of salt and about 4 tablespoons of the vegetable oil
  12. Drop the gnocchi into the boiling water in small batches to prevent them from sticking
  13. Remove the gnocchi as soon as they rise to the surface, which means they are cooked through
  14. Drain well and serve immediately with your chosen sauce, or give them a quick pan-fry in a skillet with the remaining oil for a crispier finish

Observations

Rice gnocchi is a clever twist on the traditional Italian classic, adapted to the Brazilian palate using cooked rice as the core ingredient. This homemade recipe is a great choice if you are looking for a unique, tasty, and relatively fuss-free meal. By blending cooked rice with egg, fresh herbs, and a bit of flour, you get soft dumplings that are absolutely perfect when served with your favourite sauce.
