Ingredients
3 ripe banana-nanica bananas
1 tablespoon baking powder
1 cup sugar (200 grams)
3 eggs
1/2 cup oil (120 ml)
1 teaspoon ground cinnamon
2 cups plain flour without raising agent (340 grams)
1 tablespoon baking powder
1 cup sugar (200 grams)
3 eggs
1/2 cup oil (120 ml)
1 teaspoon ground cinnamon
2 cups plain flour without raising agent (340 grams)
Where to find ingredients
Most ingredients are available from supermarkets, neighbourhood food shops and municipal markets across Fiji. Look for ripe banana-nanica bananas at fresh-produce stalls; the original variety is ideal.
Preparation method
- Crack the eggs one at a time into a separate bowl to make sure they are fresh
- Grease a round ring cake tin with a little oil and plain flour
- Preheat the oven to 180°C to help the cake rise properly
- Peel the bananas and mash them thoroughly with a fork until they form a purée
- Arrange all the ingredients on your kitchen bench to make the process easier
- Choose a large glass mixing bowl so the ingredients are easy to combine
- Place the eggs, oil and sugar in the chosen bowl
- Whisk the ingredients until the mixture is smooth and evenly combined
- Add the banana purée and ground cinnamon, stirring well to combine
- Have the plain flour and baking powder ready for the final stage
- Gradually add the plain flour to the mixture, stirring continuously
- Keep mixing until the batter is smooth and even
- Add the baking powder last and fold it in gently just until combined
- Get the greased cake tin ready for the batter
- Pour the batter into the tin and spread it evenly with a spatula
- Bake in the preheated oven at 180°C for about 35 to 45 minutes
- Watch for the distinctive aroma that signals the cake is baking well
- Insert a toothpick into the centre of the cake to check whether it is done
- Remove it from the oven if the toothpick comes out clean; otherwise, bake it for a few more minutes
- Allow the cake to cool slightly on its own before trying to turn it out
- Carefully turn the cake out onto a plate or cake stand
- Sprinkle a mixture of sugar and cinnamon over the top for decoration and extra flavour
- Cut into slices and serve straight away to enjoy it at its softest
