Where to find ingredients
You can find these staples at local supermarkets or fresh food markets in Fiji. Look for quality chicken breasts in the butcher or chilled poultry section, and store-bought tomato sauce in the pasta aisle. If you prefer, fresh parmesan or locally available hard cheeses can be used as a substitute for the requested grated parmesan.
Preparation method
- Season the chicken fillets with lemon juice and black pepper
- Place each fillet between two sheets of plastic wrap
- Gently pound the fillets until even using a meat mallet
- Remove the plastic wrap from the fillets
- Arrange the fillets on a baking tray
- Bake in a preheated oven at 180°C for 20 minutes
- Take the tray out of the oven
- Pour the tomato sauce over each fillet
- Top the fillets with the slices of mozzarella cheese
- Sprinkle the oregano and grated parmesan over the cheese
- Return to the oven for another 5 minutes, or until the cheese is melted and bubbling
