Where to find ingredients
Chicken fillets are readily available in the poultry section of most supermarkets. Oranges and fresh rosemary can be found in the produce section of supermarkets or at local farmers' markets. Garlic and olive oil are standard pantry staples available in any grocery store. Cornstarch is usually found in the baking aisle of supermarkets.
Preparation method
- Mash the garlic clove with the side of a knife to peel it
- In a bowl, combine the garlic, rosemary sprig, orange juice, and 1 tablespoon of olive oil
- Immerse the chicken fillets in the marinade
- Cover the container and let it rest for 20 minutes at room temperature
- Remove the fillets from the liquid using tongs
- Drain excess liquid well
- Pat the surface of the fillets dry with paper towel
- Heat a large skillet over medium heat
- Add the remaining 1 tablespoon of olive oil to the skillet
- Season the fillets with salt
- Place the fillets in the skillet with the smoother side down
- Sear each side for 2 minutes to seal
- Reduce the heat to low
- Cook for another 3 minutes on each side until well-cooked on the inside
- Pay attention to the thickness of the meat to ensure complete cooking without burning
- Mix the cornstarch with the remaining marinade liquid and season with salt and pepper
- Transfer the fillets to a plate and set aside
- Pour the marinade into the hot skillet over low heat
- Scrape the bottom of the skillet with a silicone spatula to release the cooking flavors
- Stir the sauce continuously for 3 minutes until it thickens
- Pass the sauce through a sieve to remove garlic and rosemary residue
- Serve the fillets drizzled with the prepared sauce
Observations
The contrast between the freshness of the orange and the distinct aroma of the herbs elevates the chicken flavor. Respecting the marinating time is essential, as is using the fond from the pan to create a rich and flavorful sauce.
