Preparation method
- Season the chicken pieces thoroughly with salt and black pepper.
- Heat the oil in a large, heavy-bottomed pot over medium heat.
- Brown the chicken pieces evenly on all sides until golden.
- Remove the browned chicken from the pot and set aside.
- In the same pot, sauté the chopped onion until translucent.
- Add the minced garlic and the green bell pepper (if using) and cook for another 2 minutes.
- Stir in the chopped tomatoes and cook until they begin to break down into a sauce.
- Mix in the turmeric powder or annatto seasoning, ensuring it is well incorporated.
- Return the chicken pieces to the pot, tossing them to coat in the aromatic base.
- Add the rice to the pot, stirring well to coat the grains in the pan juices for about 1 minute.
- Pour the hot water over the mixture and adjust the seasoning with salt if needed.
- Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 15 to 20 minutes, or until the rice is tender and the liquid is fully absorbed.
- Check that the chicken is cooked through and tender.
- Turn off the heat and gently fold in the chopped fresh parsley and spring onions.
- Cover and let the dish rest for 5 minutes before serving.
Observations
The secret to an exceptional Galinhada lies in using fresh ingredients and allowing the dish to simmer patiently so the flavors meld beautifully. Turmeric or annatto provides the signature vibrant color and distinct aroma, while aromatics like onion, garlic, and fresh herbs finish the dish with depth. While you can certainly get creative with additional vegetables, this traditional version offers a complete and delicious meal just as it is.
