Authentic Baião de Dois (Baião de dois)

Ingredients

2.5 litres cold water
500 g green beans (feijão verde)
2 beef stock cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 clove garlic, crushed
1/2 tablespoon fresh chopped cilantro
2 1/2 cups white rice
150 g queijo coalho, thinly sliced

Where to find ingredients

You can find these ingredients at local supermarkets and fresh produce markets. Look for 'feijão verde' and 'queijo coalho' in specialized Latin or international food sections, as these are specific Brazilian ingredients with no direct local equivalent. If unavailable, a mild firm feta or halloumi may serve as a substitute for the cheese, and standard green beans can replace the fresh feijão verde.

Preparation method

  1. Soak the green beans in water overnight.
  2. The next day, drain the beans and cook them in a pot with 2.5 litres of cold water and the beef stock cubes.
  3. Cover the pot and simmer over low heat for approximately 1 hour, or until the beans are tender.
  4. While the beans are cooking, heat the vegetable oil in a separate large pot.
  5. Sauté the sliced paio, grated onion, and crushed garlic in the oil until browned.
  6. Add the rinsed and drained rice and the chopped cilantro to the pot, sautéing for a few minutes to toast the grains slightly.
  7. Pour the cooked beans along with their cooking broth into the rice mixture.
  8. Stir all ingredients together, cover the pot, and cook on low heat until the rice is tender and the mixture is moist and creamy.
  9. Arrange the slices of queijo coalho over the top of the rice.
  10. Cover the pot once more and let the trapped steam melt the cheese for a few minutes.
  11. Serve the dish hot, traditionally accompanied by fried or roasted carne-de-sol if desired.
