Ingredients
1 envelope of unflavored powdered gelatin
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (using the condensed milk tin as a measure)
2 pots of plain yogurt
6 medium red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the coulis)
1/2 cup of water (optional, for adjusting the coulis consistency)
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (using the condensed milk tin as a measure)
2 pots of plain yogurt
6 medium red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the coulis)
1/2 cup of water (optional, for adjusting the coulis consistency)
Where to find ingredients
You can find fresh red guavas at local farmers' markets or the produce section of well-stocked supermarkets in Belize. If fresh guavas are out of season, high-quality guava paste or bottled guava nectar can be used as a shortcut, though the fresh fruit is recommended for the authentic coulis texture.
Preparation method
- Hydrate the powdered gelatin in the cold water.
- Place the hydrated gelatin in a bain-marie until it is completely dissolved.
- In a blender, combine the condensed milk, whole milk, plain yogurt, and the dissolved gelatin.
- Pour the mixture into a ring mold that has been lightly moistened with water.
- Refrigerate for approximately 4 hours, or until the flan is firm.
- While the flan sets, prepare the coulis by peeling and dicing the guavas.
- Add the guava cubes to a saucepan along with the sugar and 1 1/2 cups of water.
- Cook over low heat for about 20 minutes, or until the guavas are tender and beginning to break down.
- Remove from heat and transfer the mixture to a blender. Process until smooth.
- Return the guava puree to the saucepan and simmer over low heat for another 15 minutes, stirring occasionally, until the sauce thickens.
- If the coulis becomes too thick during cooking, add the optional 1/2 cup of water to reach your desired consistency.
- Allow the guava coulis to cool completely before pouring it over the flan to serve.
