Ingredients
1 sachet of unflavoured powdered gelatine
6 tablespoons of cold water
1 tin of condensed milk
1 tin of milk (use the empty condensed milk tin as a measure)
2 pots of natural yoghurt
6 medium-sized red guavas
1/2 cup of sugar
1 1/2 cups of water (for the sauce)
1/2 cup of water (optional, for the sauce)
6 tablespoons of cold water
1 tin of condensed milk
1 tin of milk (use the empty condensed milk tin as a measure)
2 pots of natural yoghurt
6 medium-sized red guavas
1/2 cup of sugar
1 1/2 cups of water (for the sauce)
1/2 cup of water (optional, for the sauce)
Where to find ingredients
You can find condensed milk, natural yoghurt, and gelatine in the dairy and baking aisles of major supermarkets. Fresh guavas are typically available in the fresh produce section, or you can use high-quality guava paste as a substitute if fresh fruit is out of season.
Preparation method
- Hydrate the powdered gelatine in 6 tablespoons of cold water.
- Dissolve the hydrated gelatine in a bain-marie until completely smooth.
- Combine the condensed milk, milk, natural yoghurt, and the dissolved gelatine in a blender and blitz until smooth.
- Pour the mixture into a ring mould that has been lightly dampened with water.
- Place in the fridge for approximately 4 hours, or until the flan is firm.
- While the flan sets, prepare the sauce: peel the guavas and cut them into cubes.
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
- Simmer over low heat for about 20 minutes, or until the guavas are very tender and starting to break down.
- Remove the pan from the heat and transfer the contents to a blender; process until you have a smooth purée.
- Return the guava purée to the pan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens.
- If the sauce becomes too thick during cooking, add the remaining 1/2 cup of water to adjust the consistency.
- Allow the guava sauce to cool completely before pouring it over the chilled flan to serve.
