Plantain Farofa (Farofa de banana-da-terra)

Ingredients

2 green plantains
2 cups yellow flaked corn flour
75 g butter, cubed
1 tbsp vegetable oil
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

Find plantains and yellow flaked corn flour at local produce markets or large supermarkets. If flaked corn flour is unavailable, fine-ground toasted cornmeal can be used as a substitute, though the final texture will be less crunchy.

Preparation method

  1. Trim the ends of the plantains and peel them.
  2. Cut each plantain in half lengthwise.
  3. Cut each half lengthwise again.
  4. If the resulting strips are too thick, slice them into three segments.
  5. Dice each piece into cubes of approximately 1 cm.
  6. Heat a large non-stick skillet over medium heat.
  7. Add the vegetable oil to the skillet.
  8. Place the diced plantains in the pan and season with a pinch of salt.
  9. Sauté the plantains for about 6 minutes, stirring occasionally, until lightly caramelized. Note that timing may vary based on the ripeness of the fruit; riper plantains will brown faster.
  10. Reduce the heat.
  11. Add the butter cubes to the skillet and stir until completely melted.
  12. Season with 1 teaspoon of salt and black pepper to taste.
  13. Gradually add the corn flour, stirring continuously with a spatula to ensure even incorporation.
  14. Cook for another 4 minutes, stirring constantly, until the farofa becomes crispy and golden brown.
  15. Turn off the heat and serve the farofa immediately.

Observations

Farofa de banana-da-terra is a staple Brazilian side dish, cherished for its unique harmony of flavors and textures. The natural sweetness of the caramelized plantains contrasts beautifully with the crispiness of the toasted corn flour, making it a versatile and flavorful addition that elevates any meal. This preparation is straightforward and efficient, ideal for those looking to add a distinctive, comforting touch to their daily table.
