Ingredients
1 kg sweet polvilho
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
Where to find ingredients
Sweet polvilho is Brazilian sweet cassava starch and may be found in Brazilian, Latin, Caribbean or international food shops. If unavailable, use sweet cassava starch only as the proper substitute, not wheat flour.
Preparation method
- Place the sweet polvilho, sugar, margarine, eggs and grated coconut in a large bowl
- Mix all the ingredients and knead with your hands until you get a smooth, even dough
- Grease a baking tray with a thin layer of fat
- Make small balls with portions of the dough
- Spread the balls over the baking tray, keeping a small space between them
- Bake in a preheated oven at medium temperature
- Let them bake until the biscuits have a lightly golden colour
Observations
These biscuits are good for an afternoon snack with fresh coffee. The preparation is simple and makes a generous batch with a firm, crisp texture and a light coconut note.
