2.5 litres cold water
500g green beans (feijão verde)

2 1/2 cups white long-grain rice
150g queijo coalho, thinly sliced

Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a large pot with 2.5 litres of cold water and the beef bouillon cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate large pot.
- Sauté the sliced paio sausage, grated onion, and crushed garlic until golden brown.
- Add the rinsed and drained rice and the chopped cilantro to the pot, stirring well to coat the grains for a few minutes.
- Pour the cooked beans along with their cooking liquid into the pot with the rice.
- Stir all ingredients to combine, cover the pan, and simmer over low heat until the rice is tender and the mixture has a moist, creamy consistency.
- Arrange the thin slices of queijo coalho over the top of the rice.
- Cover the pot again and let the residual steam melt the cheese for a few minutes.
- Serve your Baião de Dois hot, ideally with a side of pan-fried or roasted carne-de-sol if available.
