Where to find ingredients
Find fresh rice and produce at local Bridgetown supermarkets or neighborhood grocery stores. For the lime, choose a firm Tahiti-style lime to get the best zest.
Preparation method
- Peel and finely dice the onion.
- Heat the water in a kettle over low heat until it boils.
- Place a medium saucepan over low heat.
- Add the olive oil and the diced onion.
- Season with a pinch of salt.
- Sauté for about 2 minutes until the onion is softened.
- Add the bay leaf and the rice to the saucepan.
- Stir for approximately 1 minute so the grains are well coated in the oil, which ensures a fluffy result.
- Measure 2 cups of the boiling water and pour it over the rice.
- Add the remaining salt and stir briefly.
- Increase the heat to medium.
- Avoid stirring from this point on.
- Wait for the water to evaporate until it reaches the level of the grains.
- Reduce the heat to low and partially cover the pan with the lid.
- Cook until all the water has been absorbed.
- Check the bottom of the pan with a fork to ensure all the water has been absorbed.
- Turn off the heat.
