Easy homemade plantain farofa

Ingredients

2 green plantains
2 cups yellow corn flour (flocada)
75g unsalted butter, cubed
1 tbsp vegetable oil
Salt to taste
Freshly cracked black pepper to taste

Where to find ingredients

You can find plantains in the fresh produce section of local markets. Yellow corn flour (flocada) is often found in the dry goods or specialty international aisles of larger supermarkets. As a substitute for plantain, a firm banana can be used, though it will be sweeter; for the flour, coarse cornmeal is a possible alternative if the specific Brazilian-style toasted corn flour is unavailable.

Preparation method

  1. Trim the ends off the plantains and peel them.
  2. Slice each plantain in half lengthwise.
  3. Cut each half lengthwise again.
  4. If the resulting strips are too thick, slice them into three pieces each.
  5. Chop each piece into small 1cm cubes.
  6. Heat a large non-stick frying pan over medium heat.
  7. Add the oil to the pan.
  8. Add the chopped plantains to the pan and season with a pinch of salt.
  9. Sauté for about 6 minutes, stirring occasionally, until lightly caramelized. Note that timing may vary based on the ripeness of the fruit; riper plantains will brown faster.
  10. Reduce the heat to low.
  11. Add the cubed butter to the pan and stir until completely melted.
  12. Season with 1 teaspoon of salt and black pepper to taste.
  13. Gradually add the corn flour, stirring continuously with a spatula to ensure it is well incorporated.
  14. Cook for another 4 minutes, stirring constantly, until the mixture is crunchy and toasted.
  15. Turn off the heat and serve the farofa immediately.

Observations

Farofa de banana-da-terra is a classic Brazilian side dish, celebrated for its unique interplay of textures and flavors. The natural sweetness of caramelized plantains offers a wonderful contrast to the toasted, crunchy flour, making this a versatile and tasty addition to any plate. This straightforward recipe is quick to prepare, perfect for those looking to add a special touch to their everyday cooking.
