Ingredients
1 kg butternut squash
2 cloves garlic
2 tablespoons olive oil
1 teaspoon salt
2 cloves garlic
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
You can find butternut squash, fresh garlic, olive oil, and salt at any local grocery store, farmer's market, or supermarket produce section.
Preparation
- Peel the pumpkin and cut the flesh into cubes of about 2 cm
- Finely mince the garlic cloves
- Place a large pot or skillet over medium heat with the olive oil
- Add the garlic and sauté for 1 minute just to scent the oil
- Be careful not to burn it
- Add the pumpkin cubes and the salt to the pan
- Stir the ingredients occasionally for 10 minutes
- Continue until the pumpkin begins to soften
- Place the lid on the pan and reduce the heat to the lowest setting
- Let it cook for 5 minutes so the pumpkin finishes softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon
- Mash until it reaches your preferred texture
- Turn off the heat and serve immediately
Notes
With a slightly rustic texture, this mash is a practical and healthy alternative to diversify your daily meals.
