Lemon Zest Rice

Ingredients

1/2 onion
1 tablespoon olive oil
1 cup rice
1 bay leaf
1/2 teaspoon salt
2 cups water
Zest of 1 Persian lime

Preparation

  1. Peel the onion and chop it into very small pieces
  2. Heat the water in a kettle over low heat until it boils
  3. Heat a medium saucepan over low heat
  4. Add the olive oil and the chopped onion
  5. Season with a pinch of salt
  6. Sauté for about 2 minutes until the onion becomes soft
  7. Add the bay leaf and the rice to the pan
  8. Stir for approximately 1 minute so the grains are coated in the oil
  9. This ensures the rice turns out fluffy
  10. Measure 2 cups of the boiling water and pour it over the rice
  11. Season with the remaining salt and stir
  12. Increase the heat to medium
  13. Avoid stirring from this point on
  14. Wait for the water to evaporate until it reaches the level of the grains
  15. Reduce the heat and partially cover the pan
  16. Cook until all the water is absorbed
  17. Check the bottom of the pan with a fork to confirm the water has fully evaporated
  18. Turn off the heat
  19. Add the lime zest
  20. Cover the pan completely
  21. Let the rice rest in the steam for 5 minutes
  22. Use a fork to fluff the grains and incorporate the zest
  23. Transfer to a bowl and serve immediately
