Where to find ingredients
Find fresh chicken and produce in the meat and vegetable aisles; cornstarch and canned sauces are in the baking or pantry sections. Fresh Minas cheese can be sourced at specialty Latin American grocers; if unavailable, use a mild, fresh white cheese like Queso Fresco or a firm Mozzarella as a substitute. Heavy cream and Parmesan are found in the refrigerated dairy section.
Preparation method
- Cook the chicken breast in salted water until tender. Drain, shred, and set aside.
- In a saucepan, combine the shredded chicken with the tomato sauce and cook for a few minutes. Set aside.
- Boil the potatoes in salted water until they are very tender.
- Drain the potatoes and mash them while still hot using a potato ricer or fork.
- Add the butter, egg, grated nutmeg, and salt to taste to the mashed potatoes.
- Gradually fold in the cornstarch, mixing until you have a firm and pliable dough for shaping.
- Shape the potato dough into small balls.
- Cut the Minas cheese into small cubes.
- Stuff each potato ball with a cheese cube and optional chopped black olives.
- Seal the balls tightly to ensure the filling does not leak during baking.
- Arrange the stuffed potato balls in a baking dish, forming a ring.
- Place the tomato-sauced chicken in the center of the baking dish, between the balls.
- Pour the heavy cream over the balls and the chicken.
- Sprinkle with grated Parmesan cheese.
- Add dried oregano to taste.
- Bake in a preheated oven at 180°C (350°F) for approximately 20-30 minutes, or until golden brown and bubbly.
