100g white sugar
2 tablespoons roasted cashew nuts, chopped
2 medium papayas, fresh and ripe
250ml fresh cream (whipping cream)
2 tablespoons roasted cashew nuts, chopped
2 medium papayas, fresh and ripe
250ml fresh cream (whipping cream)
Where to find ingredients
You will easily find fresh papayas at most local supermarkets like Woolworths, Pick n Pay, or Spar; choose ones that are slightly soft to the touch for the best flavour. Fresh whipping cream is available in the dairy aisle—look for the 'long life' or chilled variety. For the cashew nuts, check the snacking aisle or the health food section for plain, unsalted roasted nuts. If you have trouble finding standard papaya, you can substitute with Paw-Paw, which is commonly used in South Africa and offers a similar flavour profile.
Preparation method
- Slice the papayas in half lengthways and scoop out all the black seeds
- Scoop out the flesh of one papaya and blitz in a food processor until you have a smooth, lump-free puree
- Dice the flesh of the second papaya into small, bite-sized cubes and set aside
- In a chilled bowl, whisk the fresh cream and sugar together until you achieve firm peaks
- Gently fold the smooth papaya puree into the whipped cream, being careful to keep the mixture light and airy
- Add the diced papaya pieces into the mixture and fold them through carefully
- Pour the mixture into freezer-safe moulds or a container and pop it into the freezer for at least 4 hours to set
- When you're ready to serve, briefly run the base of the container under warm water to help it loosen
- Scoop or cut the sorvete into serving bowls and scatter the chopped cashews over the top
- For an extra zing, squeeze a few drops of fresh lime juice over each serving before dishing up
