Where to find ingredients
You can find fresh shrimp at local fish markets or specialized seafood counters. Cassava (yuca) is typically found in the produce section of international grocery stores. Dende oil is a specific specialty item often located in the ethnic or Latin/Brazilian section of well-stocked supermarkets.
Preparation method
- Thoroughly clean and rinse the shrimp.
- Season the shrimp with salt, garlic, black pepper, and lemon juice.
- Allow the shrimp to marinate for a few minutes.
- Boil the cassava in a pot with water, the bay leaf, and the sliced onion.
- Once the cassava is very tender, add one of the bottles of coconut milk to the pot.
- Let the mixture cool slightly, then blend everything in a blender until you have a smooth cream.
- Heat the olive oil in a large pan and sauté the grated onions until golden.
- Add the seasoned shrimp and sauté until they turn pink.
- Stir in the tomato sauce, chopped parsley and chives, and the bell peppers.
- Simmer for a few minutes.
- Fold in the blended cassava cream, the second bottle of coconut milk, and the dende oil.
- Bring to a gentle boil and remove from the heat once it is heated through.
Observations
This iconic dish masterfully marries the succulent sweetness of fresh shrimp with the thick, comforting creaminess of slow-cooked cassava. It is a hearty, aromatic meal that brings a deep, authentic flavor profile to your table, elevated by the distinctive color and earthiness of dende oil.
