Where to find ingredients
Potatoes, chicken breast, tomatoes, onions, green peppers, and fresh coriander are readily available at any local market or grocery store. For the onion soup mix, check the seasoning or international food aisle in major supermarkets. Fresh coriander is often labelled as 'cilantro' or 'coriander' depending on the supplier. If specific Brazilian green olives are unavailable, standard pitted green olives from the deli or canned goods section serve as a perfect substitute. Shredded mozzarella can be found in the dairy chilled cabinet of any local supermarket.
Preparation method
- Boil the potatoes until soft, mash them well with the butter, and set aside
- Heat the olive oil in a pan over medium heat and sauté the chopped onion
- Add the cubed chicken and cook until nicely browned
- Stir in the diced tomatoes, green bell pepper, olives, and fresh coriander; let it cook for a few minutes
- In a separate bowl, whisk together the onion soup mix and the milk
- Pour the onion cream mixture over the sautéed chicken in the pan
- Simmer while stirring constantly until the sauce thickens to a creamy consistency
- Lightly grease a baking dish with butter to prepare for assembly
- Spread an even layer of the creamy chicken mixture at the bottom
- Cover the chicken with a layer of the cooked rice
- Top with a smooth, even layer of the prepared mashed potatoes
- Finish by sprinkling a generous amount of shredded mozzarella over the top
- Bake in a preheated oven at 180°C for about 20 minutes, or until the cheese is melted and golden brown
