Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with 2.5 litres of cold water and the beef stock cubes.
- Cover the pot and simmer over low heat for approximately 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the oil until golden.
- Add the washed and drained rice along with the chopped coriander to the pot, sautéing for a few minutes.
- Incorporate the cooked beans and their cooking liquid into the rice mixture.
- Stir all ingredients well, cover, and cook over low heat until the rice is tender and the consistency is moist.
- Arrange the slices of queijo coalho evenly over the top of the rice.
- Cover the pot again and allow the residual steam to melt the cheese for a few minutes.
- Serve the Baião de Dois hot, ideally paired with pan-fried or roasted carne-de-sol.
