Creamy Shrimp Soup (Caldo de camarão cremoso)

Ingredients

500g fresh shrimp
300g cassava (mandioca)
1 small bottle of coconut milk
1 sachet of powdered seasoning (flavor of choice)
5 tablespoons annatto (colorau)
2 teaspoons salt (or to taste)
2 teaspoons monosodium glutamate (optional)
100ml vegetable oil or 100g margarine
100ml brandy
Minced garlic to taste

Where to find ingredients

You can find fresh shrimp and local tropical produce like cassava at Honiara's Central Market or local fish markets. Annatto (colorau), coconut milk, and other pantry staples are available at local supermarkets in town.

Preparation method

  1. Rinse the shrimp thoroughly under cold water.
  2. Heat the oil or margarine in a large pot over medium heat.
  3. Sear the whole shrimp, including the heads, in the hot fat until they turn a vibrant red.
  4. Remove the shrimp from the pot and set aside on a plate to cool.
  5. Peel the cassava, chop into small pieces, and place them into a blender.
  6. Pour the coconut milk into the blender.
  7. Add the seared shrimp heads into the blender.
  8. Take 250g of the cooled, peeled, and headless shrimp and add them to the blender.
  9. Pour 500ml of water into the blender and blend until the mixture is perfectly smooth.
  10. In the same pot used to sear the shrimp, add the minced garlic and sauté until fragrant.
  11. Stir in the powdered seasoning, annatto, salt, and the optional monosodium glutamate.
  12. Sauté the seasoning base for a few moments to bloom the spices.
  13. Pour the blended mixture from the blender into the pot with the sautéed seasonings.
  14. Stir well and add extra water if needed to reach your desired consistency, ensuring it is not too thick.
  15. Simmer for about 15 minutes over low heat, stirring occasionally.
  16. Once finished, stir in the brandy, mix thoroughly, and remove from the heat.
