Ingredients
1 kg salted dried beef
2 large onions
1/3 cup bottled butter
Salt to taste
2 large onions
1/3 cup bottled butter
Salt to taste
Where to find ingredients
Look for salted or cured beef at butcher counters, supermarket meat sections or specialty Brazilian/Latin grocers. Bottled butter is best from Brazilian or African food shops; clarified butter is only a substitute if bottled butter is unavailable.
Preparation method
- Cut the salted dried beef into pieces of about 7 cm
- Rinse the beef pieces well under running water to remove excess salt
- Place the beef in a bowl and cover with cold water. Refrigerate for at least 12 hours, changing the water at least 3 times during desalting
- After desalting, drain the beef and rinse it again under running water
- Transfer the beef to a pressure cooker and cover with water, making sure not to go past 2/3 of the pot's capacity
- Close the pressure cooker and place it over high heat
- Once the cooker reaches pressure and starts to whistle, lower the heat and cook for 30 minutes
- Turn off the heat and wait for all the pressure to release naturally before opening the lid
- Using a slotted spoon, lift the cooked beef out of the pot and place it on a serving dish
- While the beef is still hot, shred it with two forks. Discard any small pieces of fat or cartilage
- If you prefer, shred the beef in a stand mixer on low speed until it reaches the texture you want
- Peel the onions and cut them into half-moons about 1 cm thick
- Heat a large frying pan over medium heat
- Add the bottled butter to the hot frying pan. Add the sliced onions and season with a pinch of salt
- Sauté the onions for about 5 minutes, until they soften
- Add the shredded salted beef to the pan with the onions
- Stir and sauté for another 5 minutes. Taste and adjust the salt if needed
- Serve immediately
Observations
Onion-fried carne seca with bottled butter is a well-loved dish from Brazilian cooking, prized for its bold savoury flavour and straightforward method.
It works beautifully for a filling lunch or as a snack-style plate, bringing together shredded beef, softened onion and the rich aroma of bottled butter. Soaking the meat to draw out salt is the step that keeps the seasoning balanced and the beef tender.
Follow the method below to make it at home with the proper texture and full, comforting flavour.
