Preparation method
- Preheat the oven to 180°C fan bake
- In a blender, combine the chopped spring onions, chilli sauce, mustard, 1 cup of white wine, 1 cup of chicken stock, 1 cup of melted butter from the marinade, and salt
- Blitz until the mixture is smooth
- Transfer the mixture into a bowl
- Add the remaining white wine and chicken stock, stirring well to combine
- Pour a small amount of the marinade into the cavity of the turkey
- Place the bird into a roasting dish; there is no need to grease it
- Carefully loosen the skin over the turkey breast using your hands, creating a gap between the skin and the meat
- Prick the breast meat in several places with a fork
- Use a meat injector to inject extra melted butter deep into the breast meat
- Spread the rest of the blended marinade all over the outside of the turkey
- Inject some of the liquid into the denser parts of the meat
- Smooth the skin back over the breast and secure the cavity opening with bamboo skewers or kitchen twine if needed
- Cover the roasting dish with foil and bake for approximately 3 hours
- Every 20 minutes, remove the foil, open the oven, and baste the turkey generously with the pan juices
- For the final 30 minutes, remove the foil and continue roasting uncovered
- Let the turkey brown until the skin is golden and crispy
