Where to find ingredients
Find fresh produce and poultry at local supermarkets or independent greengrocers. Onion soup mix is available in the dry goods aisle of any major supermarket. As a substitute for Brazilian-style 'creme de cebola' (onion soup mix), a standard dry onion soup base works perfectly. Mozzarella can be found in the dairy section; if unavailable, any mild, melting cheese is a suitable alternative.
Preparation method
- Prepare the potato mash by boiling the potatoes until tender, then mash them with butter and set aside.
- Heat the olive oil in a pan and sauté the chopped onion.
- Add the cubed chicken and brown well.
- Add the chopped tomatoes, capsicum, olives, and coriander. Cook for a few minutes.
- In a separate bowl, whisk the onion soup mix with the milk.
- Pour the onion soup and milk mixture over the sautéed chicken.
- Cook, stirring constantly, until the sauce thickens.
- Grease a baking dish with butter to prepare for layering.
- Spread a layer of the chicken cream into the dish.
- Cover with a layer of cooked rice.
- Add a layer of potato mash on top.
- Finish with a generous layer of grated mozzarella cheese.
- Bake in a preheated oven at 180°C for approximately 20 minutes, or until the cheese is melted and golden.
