Easy and Creamy Pawpaw Ice Cream with Cashews

Ingredients

100g sugar
2 tablespoons chopped cashew nuts
2 medium pawpaws, with fresh pulp
250ml fresh cream, for whipping

Where to find ingredients

Pawpaws are commonly found in local markets and some larger supermarkets. Look for ripe, but firm fruits. Cashew nuts are usually available in the baking or snacks aisle of most supermarkets, or at local markets. Fresh cream for whipping can be found in the chilled dairy section of supermarkets.

Preparation method

  1. Cut the pawpaws in half and remove all seeds
  2. Scoop out the pulp from one pawpaw and blend until smooth
  3. Dice the pulp from the second pawpaw into small pieces and set aside
  4. Whip the fresh cream with sugar until stiff peaks form
  5. Gently fold the pawpaw puree into the whipped cream, being careful not to deflate it
  6. Stir in the diced pawpaw pieces gently
  7. Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
  8. To unmould, briefly dip the bottom of the container in warm water
  9. Cut the ice cream into cubes, serve in bowls, and sprinkle with cashew nuts
  10. If desired, add a few drops of lemon juice over the bowls for a citrusy touch
