Okra Stew (Ensopado de quiabo)

Ingredients

200g okra (about 20 pods)
1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can diced peeled tomatoes (with juices)
2/3 cup water
1 tbsp extra virgin olive oil
1/2 tsp cumin seeds
Sea salt and freshly ground black pepper to taste

Where to find ingredients

Fresh produce like okra, red onions, and bell peppers can be found at local markets or supermarkets. Canned tomatoes and spices are available in the pantry aisles of standard grocers.

Preparation method

  1. Wash the okra pods thoroughly and pat them dry with a clean kitchen towel.
  2. Trim the stems and slice each pod crosswise on a bias into 1 cm pieces.
  3. Set the sliced okra aside.
  4. Finely dice the red onion and mince the garlic clove.
  5. Halve the bell pepper, discard the seeds, and dice half of it into 1 cm cubes.
  6. Lightly crush the cumin seeds using a mortar and pestle to release their fragrance.
  7. Heat a medium saucepan over medium heat and add the olive oil.
  8. Add the onion and diced bell pepper to the pan.
  9. Season with a pinch of salt and sauté for 3 minutes until the vegetables soften.
  10. Stir in the minced garlic and the crushed cumin seeds.
  11. Sauté for 1 minute until fragrant.
  12. Pour in the water, stirring well to deglaze the pan and incorporate the flavors.
  13. Add the canned tomatoes along with their juices.
  14. Season with 1 teaspoon of salt and black pepper to your preference.
  15. Bring the mixture to a gentle boil over medium heat.
  16. Reduce the heat and simmer for 5 minutes, stirring occasionally, until the sauce thickens slightly.
  17. Add the sliced okra to the saucepan.
  18. Cook for an additional 6 minutes, stirring from time to time, until the okra is just tender.
  19. Take care not to overcook the okra to ensure it retains its ideal texture.
  20. Serve immediately while hot.

Observations

This stew artfully balances the unique texture of okra with a spiced, flavorful sauce, making it an excellent side dish for everyday meals.
