1 egg
1/2 kg all-purpose flour
2 tablespoons oil
1 glass water
1 tablet fresh yeast
25 g sugar
15 g salt
1/2 kg all-purpose flour
2 tablespoons oil
1 glass water
1 tablet fresh yeast
25 g sugar
15 g salt
Where to find ingredients
You can find all-purpose flour, yeast, and fresh ingredients at local general supermarkets, grocery stores, or street markets. Fresh yeast is found in the refrigerated section.
Preparation method
- Mix the yeast with a small portion of the flour and a little of the water to create a starter sponge
- Let the mixture rest for about 10 minutes to activate the yeast
- Add the remaining flour, egg, sugar, salt, oil, and the rest of the water gradually
- Knead well until you obtain a homogeneous and very soft dough
- Shape into small balls of your preferred size and let them rest for 15 minutes under a clean kitchen towel
- Roll out each ball with a rolling pin, insert your filling of choice, and seal the edges tightly just like a turnover
- Place the fogazzas on a greased tray and let them rest briefly before frying
- Fry in hot oil until golden brown on both sides and drain on paper towels
