Ingredients
1 envelope unflavored gelatin powder
6 tablespoons cold water
1 can sweetened condensed milk
1 can whole milk (use the empty condensed milk tin as your measure)
2 cups plain yogurt
6 medium red guavas
1/2 cup granulated sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for the sauce consistency)
6 tablespoons cold water
1 can sweetened condensed milk
1 can whole milk (use the empty condensed milk tin as your measure)
2 cups plain yogurt
6 medium red guavas
1/2 cup granulated sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for the sauce consistency)
Where to find ingredients
Sweetened condensed milk and plain yogurt are standard in any local supermarket. For red guavas, check the tropical or exotic fruit section of larger grocery stores; if fresh guavas are out of season or hard to find, you can often source jars of guava paste or frozen guava pulp in the international aisle or at specialty Latin-American food shops. Unflavored gelatin is easily found in the baking supplies aisle.
Preparation method
- Bloom the gelatin powder in 6 tablespoons of cold water
- Dissolve the hydrated gelatin over a bain-marie until completely smooth
- In a blender, whiz together the condensed milk, whole milk, plain yogurt, and the dissolved gelatin until well combined
- Pour the mixture into a ring mold that has been lightly rinsed with cold water to help with unmolding
- Chill in the fridge for about 4 hours, or until the flan is properly set
- While the flan is chilling, prepare the sauce: peel the guavas and chop them into cubes
- Toss the guava pieces into a saucepan with the sugar and 1 1/2 cups of water
- Simmer over low heat for about 20 minutes, or until the fruit is tender and beginning to break down
- Take the pan off the heat and blitz the mixture in a blender until you have a smooth purée
- Return the purée to the pan and cook over low heat for another 15 minutes, stirring occasionally until the sauce thickens
- If the sauce gets too thick while bubbling away, add the optional 1/2 cup of water to loosen the texture
- Allow the guava sauce to cool down completely before drizzling it over the chilled flan
