Mousse Tentação: A Classic Brazilian Passion Fruit & Chocolate Dessert

Ingredients

1/2 bottle concentrated passion fruit juice
3 cans condensed milk
4 cans table cream
2 boxes chocolate pudding mix
2 tablespoons cornstarch
1 litre milk

Where to find ingredients

Look for concentrated passion fruit juice in the juice aisle of larger supermarkets or speciality Latin American food stores. Table cream (creme de leite) can usually be found in the dairy section of supermarkets, often near the whipping cream or evaporated milk. Chocolate pudding mix is widely available in the baking or dessert aisles.

If you can't find concentrated passion fruit juice, you can use fresh passion fruit pulp (about 4-5 fruits) blended with a little water and strained, then use that amount. For table cream, if unavailable, a good substitute is heavy whipping cream, but the texture might be slightly different.

Preparation method

  1. Pour 2 cans of condensed milk into a blender
  2. Add 2 cans of table cream
  3. Pour in the concentrated passion fruit juice
  4. Blend thoroughly until you have a smooth mixture
  5. Set this first part aside
  6. Heat the milk in a saucepan
  7. Mix in the remaining condensed milk
  8. Add the cornstarch
  9. Stir in the chocolate pudding mix, dissolved in a little milk
  10. Combine everything in the hot milk
  11. Stir constantly until the cream thickens
  12. Let it cool completely
  13. Transfer this to a stand mixer and add the remaining 2 cans of table cream
  14. Beat until you have a light, fluffy cream and set aside
  15. Layer the dessert, alternating between the two creams
  16. Garnish with passion fruit seeds or chocolate shavings
  17. Chill thoroughly before serving

Observations

This dessert is absolutely spot-on for special occasions or when you've got family over. It makes a generous amount and everyone loves it because the flavours are so well-balanced and the texture is wonderfully smooth and creamy.
