Ingredients

500g green beans
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon chopped cilantro
2.5 cups long-grain white rice
150g queijo coalho, thinly sliced
500g green beans
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon chopped cilantro
2.5 cups long-grain white rice
150g queijo coalho, thinly sliced
Where to find ingredients
Find green beans, paio sausage, and queijo coalho at specialized international grocery stores or local ethnic food markets. As a substitute for queijo coalho, use halloumi or a firm, salty frying cheese.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the bouillon cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate large pot.
- Brown the sliced paio sausage, grated onion, and crushed garlic in the oil.
- Add the washed and drained rice along with the chopped cilantro to the pot and sauté for a few minutes.
- Pour the cooked beans and their cooking liquid into the rice mixture.
- Stir everything well, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and creamy.
- Distribute the thin slices of queijo coalho evenly over the top of the rice.
- Cover the pot once more and let the steam melt the cheese for a few minutes.
- Serve the Baião de Dois warm, optionally accompanied by fried or roasted carne-de-sol.
