Where to find ingredients
Find cornmeal, cassava flour, canned sardines, peas, and tomato sauce at local supermarkets. Fresh shrimp, eggs, and produce such as tomatoes and herbs can be sourced at local markets or grocery stores. Hearts of palm are often available in the international or gourmet aisles of larger supermarkets; as a substitute for hearts of palm, marinated artichoke hearts may be used if necessary.
Preparation method
- In a pan, combine the chopped tomatoes, black olives, hearts of palm, green peas, tomato sauce, and the shrimp
- Cook the ingredients over medium heat, adding water and salt to taste, until a thick and flavorful sauce forms
- In a separate bowl, mix the cornmeal and the cassava flour
- Pour the hot sauce over the flour mixture bit by bit, stirring continuously until you reach a moist and homogeneous consistency
- Preheat a steamer or a traditional cuscuz mold
- Place the mixture into the steamer, shaping the cuscuz
- Decorate the top with the boiled eggs and the canned sardines
- Steam the cuscuz over low heat for approximately 20 to 30 minutes, or until it is firm and cooked through
