Where to find ingredients
You can find all these staples in any local Irish supermarket like Dunnes, Tesco, or SuperValu. For the rice, standard long-grain white rice works perfectly. Fresh herbs such as parsley, coriander, and spring onions are widely available in the fresh produce section. Vegetable oil and plain flour are standard pantry essentials. If you are near a specialty shop or a larger ethnic grocery store, you might find a wider range of rice varieties, but your local neighbourhood supermarket will definitely have everything you need for this recipe.
Preparation method
- Boil the rice in salted water until it is very tender
- Drain any excess water well if there is any left in the pan
- Blitz the cooked rice in a blender with the egg, parsley, coriander, and spring onions until you have a smooth, consistent mixture
- Transfer the mixture into a saucepan
- Gradually stir in the flour until it is fully incorporated
- Cook the mixture over a low heat, stirring constantly, until it pulls away from the bottom of the pan and comes together into a soft ball
- Season with a pinch of sea salt
- Remove the dough from the heat and leave it to cool until it is warm to the touch
- On a clean, lightly floured work surface, roll the dough out into a long rope about 2 cm thick
- Slice the rope into small pieces, roughly 2 cm in size
- Bring a large pot of salted water to the boil with about 4 tablespoons of vegetable oil added
- Drop the gnocchi into the boiling water in small batches so they do not stick together
- Remove the gnocchi from the water as soon as they float to the surface, which shows they are cooked through
- Drain well and serve immediately with your favourite sauce, or for an extra touch, pan-fry them briefly in the remaining oil until golden
Observations
Rice gnocchi is a clever Brazilian twist on the classic Italian dumpling, perfect for using up cooked rice. This homemade version is a brilliant, budget-friendly dish for when you fancy something a bit different but easy to pull together. By blitzing cooked rice with egg, fresh herbs, and a bit of flour, you create soft, light dumplings that soak up any sauce you fancy serving them with.
