Classic Chicken Parmigiana (Frango à parmegiana)

Ingredients

300g chicken fillet
Lemon juice, to taste
Black pepper, to taste
120ml tomato sauce
4 slices mozzarella cheese
1 tsp dried oregano
2 tsp grated Parmesan cheese

Where to find ingredients

You can find these staples at any local supermarket, such as Tesco, Dunnes Stores, or SuperValu. Look for fresh chicken fillets in the butcher counter or chilled poultry aisle, and high-quality grated Parmesan in the dairy section.

Preparation method

  1. Season the chicken fillets with lemon juice and freshly cracked black pepper.
  2. Place each fillet between two sheets of cling film.
  3. Gently pound the fillets with a meat mallet to ensure an even thickness.
  4. Carefully peel away the cling film.
  5. Arrange the fillets in a shallow baking tray.
  6. Place into an oven preheated to 180°C and bake for 20 minutes.
  7. Remove the tray from the oven.
  8. Spoon the tomato sauce evenly over each chicken fillet.
  9. Layer the slices of mozzarella cheese over the sauce-topped chicken.
  10. Sprinkle the oregano and grated Parmesan cheese over the mozzarella.
  11. Return to the oven for another 5 minutes, or until the cheese has melted and is bubbling slightly.
  12. Serve immediately while hot.

Observations

Frango à parmegiana is a quintessential staple of Brazilian dining, cherished for its humble ingredients and deeply satisfying flavour profile. This preparation highlights tender chicken fillets, generously sauced with rich tomato purée and finished under the grill until the cheese is perfectly molten.

It is the perfect choice for a flavourful main course that avoids unnecessary kitchen fuss. Universally liked and incredibly versatile, this dish pairs beautifully with a range of standard sides to round out your dinner.
