Creamy Shrimp Bobó

Ingredients

1 kg fresh shrimp
Salt to taste
3 garlic cloves, minced and crushed
Juice of 1 lime
Black pepper to taste
1 kg peeled cassava
1 onion, sliced
1 bay leaf
2 onions, grated
6 tablespoons olive oil
2 bottles coconut milk
2 cans tomato sauce
1 bunch fresh parsley and scallions, chopped
2 green bell peppers, chopped
2 tablespoons dendê oil

Where to find ingredients

You can find fresh shrimp and local produce like cassava at municipal markets. Coconut milk, tomato sauce, and aromatics are available at general grocery stores. Dendê oil may be sourced from specialty shops or stores carrying Latin American ingredients.

Preparation method

  1. Thoroughly wash the shrimp.
  2. Season the shrimp with salt, garlic, pepper, and lime juice.
  3. Allow the shrimp to marinate for a few minutes.
  4. Boil the cassava in a pot with water, the bay leaf, and the sliced onion.
  5. Once the cassava is very tender, add one bottle of the coconut milk.
  6. Let the mixture cool slightly and blend until smooth and creamy.
  7. Heat the olive oil in a large pot and sauté the grated onions until golden.
  8. Add the seasoned shrimp and sauté until they change color.
  9. Stir in the tomato sauce, fresh herbs, and chopped green bell peppers.
  10. Cook for a few minutes until the flavors meld.
  11. Fold in the blended cassava cream, the second bottle of coconut milk, and the dendê oil.
  12. Bring to a gentle boil and remove from heat once thoroughly warmed through.

Observations

This dish harmonizes the delicate texture of fresh shrimp with the signature heartiness of cooked cassava, resulting in a comforting meal packed with authentic flavor. The combination of coconut milk and dendê oil adds a distinctive, aromatic finish that makes this a centerpiece of traditional cooking.
