Where to find ingredients
You can easily pick up staples like eggs, milk, sugar, margarine, flour, cornstarch, and baking powder at any local grocery store or market in Ghana. Condensed milk is a common pantry item found in all major supermarkets and neighbourhood shops. For the chopped chocolate, head to the baking aisle of larger supermarkets for baking blocks, or simply grab your favourite quality chocolate bars from the confectionery section.
Preparation method
- Start by preheating your oven to 180°C
- Place the eggs, milk, condensed milk, sugar, margarine, flour, cornstarch, and baking powder into your blender and blitz until the mixture is completely smooth
- Grease a 22cm round cake tin lightly with a little margarine
- Pour only half of the batter into the prepared tin and scatter the chopped chocolate pieces evenly over the top
- Finish by pouring the remaining batter over the chocolate layer to cover it completely
- Bake for about 40 minutes, or until the top is golden and a skewer comes out clean
- Remove from the oven, let the cake cool for a few minutes, then carefully turn it out of the tin to serve
Observations
This is a brilliantly handy recipe, perfect for when you need a delicious sweet treat made in a flash. The secret is the condensed milk in the batter, which gives it an incredibly moist texture and a lovely, indulgent sweetness that sets it apart from standard cakes.
