Where to find ingredients
You can find fresh chicken, potatoes, and vegetables at local markets like Makola or Agbogbloshie, or at reputable supermarket chains such as Shoprite or Palace Hypermarket. The onion soup mix can be found in the imported goods or seasoning aisle of major grocery stores. If you cannot find the exact onion soup mix, a blend of dried onion flakes, salt, and garlic powder works as a suitable substitute.
Preparation method
- Boil the potatoes until soft, mash them well with the butter, and set aside.
- In a large pan, heat the olive oil and sauté the chopped onion until translucent.
- Add the cubed chicken to the pan and sear until browned.
- Stir in the chopped tomatoes, bell pepper, green olives, and coriander; cook for a few minutes to soften.
- In a separate bowl, whisk together the onion soup mix and the milk.
- Pour the milk and onion mixture into the pan with the sautéed chicken.
- Cook over medium heat, stirring constantly, until the sauce has thickened.
- Grease a baking dish with a little extra butter to prepare for assembly.
- Spread the creamy chicken mixture evenly over the bottom of the dish.
- Spread a layer of the cooked rice over the chicken filling.
- Carefully spread the mashed potatoes over the top, smoothing the surface.
- Generously sprinkle the grated mozzarella cheese over the mashed potatoes.
- Bake in a preheated oven at 180°C for approximately 20 minutes, or until the cheese is melted and golden brown.
