Traditional Chicken and Rice Stew (Galinhada)

Ingredients
1 whole chicken, cut into medium pieces
4 tablespoons of oil or olive oil
Salt to taste
Black pepper to taste
1 large onion, chopped
3 garlic cloves, minced
1/2 green bell pepper, chopped (optional)
2 tomatoes, peeled, seeded, and chopped
1/2 teaspoon of turmeric powder or 2 sachets of seasoning mix with turmeric
2 cups of white rice
4 cups of hot water
1/4 cup of chopped fresh parsley and scallions

Preparation method
- Season the chicken pieces with salt and black pepper to taste.

- Add the rice and mix well, coating the grains in the mixture for about 1 minute.
- Pour the hot water into the pot and adjust the salt if necessary.
- Once it starts to boil, reduce the heat, cover the pot, and cook for approximately 15 to 20 minutes, or until the rice is cooked and the water has been absorbed.
- Check to ensure the chicken is thoroughly cooked through.
- Turn off the heat and stir in the chopped fresh parsley and scallions.
- Let the Galinhada rest covered for 5 minutes before serving.
