Where to find ingredients
You can find all these staples at any local Ghanaian market or neighbourhood supermarket. Look for 'parboiled' or 'fragrant' long-grain rice in the grain aisle. Fresh produce like carrots, bell peppers, onions, parsley, and spring onions are widely available at local markets (e.g., Makola or Agbogbloshie) or the vegetable sections of major grocery stores. Raisins and green peas (canned or frozen) are usually found in the baking or tinned goods section of supermarkets. For the Parmesan, head to the cheese or dairy chilled aisle of any well-stocked supermarket in Accra or larger cities.
Preparation method
- Place the water in a pot and add the salt and a drizzle of oil
- Bring the water to a boil over medium heat
- Add the washed rice to the pot and stir gently
- Reduce the heat to low
- Cook until the water has fully evaporated
- Remove the rice from the heat and keep it aside
- Melt the butter in a large frying pan or casserole dish
- Lightly sauté the raisins and green peas
- Transfer the sautéed mix to a large mixing bowl
- Add the finely chopped spring onions, grated carrots, diced bell peppers, onion, fresh parsley, and parmesan to the bowl
- Gently fold the cooked rice into the bowl with the other ingredients
- Mix everything thoroughly until well combined and serve
