Pressure Cooker Milk Caramel

Ingredients

1 can (395g) condensed milk

Where to find ingredients

Condensed milk is available in most supermarkets and small local shops across Fiji.

Preparation method

  1. Remove the paper label from the condensed milk can
  2. Using a small knife, remove any glue residue to avoid clogging the cooker's valve
  3. Place the condensed milk can inside the pressure cooker
  4. Add water to the pot until the can is covered, leaving about two fingers' width of water above it
  5. Close the pressure cooker and place over medium heat
  6. As soon as the cooker starts to hiss (whistle), reduce the heat if necessary and cook for 20 minutes
  7. Turn off the heat and let the steam escape naturally. Do not force the steam out
  8. Once all pressure has been released, carefully open the pot lid
  9. Use tongs to remove the hot can from the pot, avoiding burns
  10. Let the can cool completely for at least 2 hours before opening
  11. For best results, prepare the milk caramel the day before serving
