Preparation method

  1. Separate the escarole leaves and wash them thoroughly under cold running water.
  2. Dry the leaves well using a salad spinner to ensure they do not become soggy.
  3. Stack about 5 leaves, roll them into a tight cylinder, and slice into 3 cm strips.
  4. Crush the garlic cloves with the flat side of your knife to peel them, keeping them whole to infuse the oil.
  5. Heat a large non-stick skillet over medium heat.
  6. Add a drizzle of olive oil, the peanuts, cayenne pepper, and a pinch of salt.
  7. Sauté the peanuts for about 3 minutes until they are lightly golden.
  8. Remove the peanuts from the pan and set them aside in a small bowl.
  9. In the same skillet, still over medium heat, add 1 1/2 teaspoons of olive oil and one garlic clove.
  10. Sauté the garlic for 1 minute just until the oil is fragrant.
  11. Add half of the escarole, season with a pinch of salt, and sauté for 2 minutes.
  12. Stir occasionally until the leaves are slightly charred but still retain their texture, taking care not to release excess water.
  13. Remove the first batch of escarole and repeat the process with the remaining leaves.
  14. Transfer the sautéed escarole to a serving dish and finish by sprinkling the spicy peanuts over the top before serving.
