Ingredients
1 kg polvilho doce
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
Where to find ingredients
In Belize, sugar, margarine, eggs and grated coconut are easy to find in groceries and supermarkets. Polvilho doce may be found as sweet cassava starch in Latin, Brazilian or international shops; sweet cassava starch is the ideal ingredient, not wheat flour.
Preparation method
- Place the polvilho doce, sugar, margarine, eggs and grated coconut in a large bowl
- Mix all the ingredients and knead with your hands until you get a smooth, even dough
- Grease a baking tray with a thin layer of fat
- Make small balls with portions of the dough
- Spread the balls across the tray, keeping a small space between them
- Bake in a preheated oven at medium temperature
- Let them bake until the biscuits show a lightly golden colour
Observations
These biscuits are ideal for an afternoon snack, with a crisp texture and a simple dough shaped into small balls before baking.
Polvilho doce is sweet cassava starch, a Brazilian ingredient that gives the biscuits their distinctive bite and should be kept as the main starch.
