In Belize, peanuts, sugar, baking soda and corn syrup can be found in supermarkets, grocery shops and market stores. Use raw peanuts for the original texture; a lightly greased cool stone or metal tray works well for setting.
Preparation method
- Start by mixing the peanuts, sugar and corn syrup in a deep microwave-safe container
- Microwave the mixture on high power for 10 minutes, pausing the cooking a few times to stir well and make sure it cooks evenly
- As soon as you remove the container from the appliance, add the baking soda and stir quickly so it is fully incorporated into the mixture
- Immediately spread the syrup over a stone counter or cool surface that has been greased beforehand with a little margarine
- Let the sweet rest until completely cool and only then break it into smaller pieces to serve
