Ingredients

300g chicken breast fillets
Lemon juice, to taste
Black pepper, to taste
1/2 cup tomato sauce
4 slices mozzarella cheese
1 teaspoon dried oregano
2 teaspoons grated Parmesan cheese

Where to find ingredients

You can find fresh chicken breast fillets and dairy products at local Belizean supermarkets or butcher shops. Opt for high-quality canned tomato sauce or prepare your own using fresh, ripe tomatoes available at local markets (locally known as the market stalls).

Preparation method

  1. Season the chicken fillets with the lemon juice and black pepper.
  2. Place each fillet between two sheets of plastic wrap.
  3. Gently pound the fillets with a meat mallet to an even thickness.
  4. Remove the plastic wrap from the fillets.
  5. Arrange the chicken fillets on a baking dish.
  6. Place in a preheated oven at 180°C (350°F) for 20 minutes.
  7. Remove the baking dish from the oven.
  8. Spoon the tomato sauce evenly over each chicken fillet.
  9. Place the slices of mozzarella cheese over the sauce-topped chicken.
  10. Sprinkle with the dried oregano and grated Parmesan cheese.
  11. Return to the oven for another 5 minutes, or until the cheese has melted and is bubbling.
